It’s not often that I swap recipes with you guys, but I can’t resist sharing this healthy weekend fare that’s easy to make and great for the whole family (read: kids love it!).
Do not be scared of the cottage cheese in it. I repeat, do not be scared. You cannot even taste a hint of it in the pancakes.

Blueberry Oat Pancakes
Cooking spray
1 cup old-fashioned rolled oats
1/2 cup low-fat cottage cheese
2 large eggs
1 teaspoon vanilla extrac
1 cup blueberries
Combine oats, cottage cheese, eggs and vanilla in a blender or food processor; process until smooth. Stir in blueberries. Spray griddle or skillet with cooking spray and heat over medium high. Cook 3 minutes or until tops are covered with bubbles and edges looked cook. Carefully flip them over and cook until golden brown. Serve with maple syrup.
